Local public health departments consistently monitor businesses serving food to guarantee restaurants and other food retailers are following safe food handling methods. State and county laws regulate how ofteb these inspections will take place, and what items the inspectors will look for, but, usually the health inspectors check that preventive measures are in place to shelter food from contamination by food handlers, cross-contamination, and contamination from other sources in the business.
